Meal Planning: The Vegetarian Week

My husband has slowly cut out meat, bit by bit, until last week he enjoyed his last steak and decided that he was to be vegetarian. This transition has been tricky for me. Like many 80’s kids, we were brought up understanding that a meal consists of meat, carbs and some vegetables (carrots and peas most days!). That means I’ve had to really rethink the way I approach our meal plan, because simply removing the meat from what we’d usually have isn’t really the answer!

Over the last few months I’ve found myself cooking up to three different meals in an evening. One for the bigger boys and me, one for the toddler and a vegetarian one for Ted. I really don’t have the time for that, but I literally didn’t know where to start when looking for a happy medium. I’ve done some googling, I’ve read some great blog posts and I am ready for a challenge. This week, starting today, we are all going to eat vegetarian. I haven’t told the boys because I know that will only make mealtimes more difficult when they revolt against something they haven’t even tried. I’m just going to dish up the meals and see what they say…

Enough waffling from me though, the point of the post is to detail my weekly meal plan so here it is. It includes lunches too as the boys – and sometimes Ted – are usually at home with me for those.


Cheese on toast
French Onion Soup
Cheese and Tomato Pasta
Beans on Toast
Tomato Soup
Potato Skins

Now I know those aren’t very adventurous but that’s not what I’m going for here. I’m just a woman trying to get through her week without chicken and bacon, y’know? The French Onion Soup is a recipe I’ve taken from my good friend Jane over at Hodge Podge Days and is a vegetarian alternative to the standard version.


Vegetable Lasagne
Spinach and Cheese Canneloni
Vegetable Risotto
Sweet Potato Curry
Sausage Casserole
Roast Dinner

I  have Quorn Lincolnshire sausages for the casserole and I’m hoping that cooking them in a sauce and in the slow cooker will help me to pass them off as ‘proper sausages’ to the kids. Robot in particular has a keen eye for meat-free meat products and will likely turn up his nose, but we shall see. I’ve also bought some Quorn chicken nuggets this week. I’ve no idea what they’re like in comparison to the usual ones we buy and I haven’t included them in the meal plan because it isn’t something I would usually serve up as a meal. They may well end up as a lunch time dish, we’ll see.

  1. Your menu makes me hungry! Make sure you brown the sausages before you put them in the slow cooker and don’t cook them for too long, couple of hours max or they go soggy. I cook the sauce first for a few ours then stick the sausages in. The Quorn chicken nuggets are one of my favourites, I don’t know what real ones taste like but I like these as a treat. Hope they don’t spot the changes!

    One suggestion I do have is that the Quorn chicken pieces go really nice in a pasta bake.

  3. My daughter is allergic to chicken and she’s been loving the Quorn chicken nuggets. She seems to enjoy them so far.
