Meal Plan: 26th Feb

I haven’t shared a meal plan for a few weeks because I’ve been totally winging meal times for far too long. This week though I’m a little more prepared so I have jotted a few ideas down for the coming week.

I’ve stopped going to Slimming World now because I just wasn’t sticking to it, wasn’t losing weight and was getting stressed about it. So to be kinder to myself, I’ve taken away the pressure of attending the group. I would still like to lose some weight but my mental health is more important to me than losing a couple of stone so for now that’s on the backburner.

Anyway, on with the meal plan!

This week we’re having…

Lunches

  • Vegetable fried rice
  • Tomato soup and part-baked baguettes
  • Cheese or egg sandwiches
    Crisps
  • Quesedilla
  • Chicken Salad wraps
  • Cheese and tomato Pasta

Dinners

  • Make your own pizza, chips and beans
  • Curry, rice and naan
  • Meatballs and spaghetti
  • Nuggets and chips
  • Chilli & rice
  • Sausage and mash

Desserts

  • Victoria sponge cake
  • Rice Pudding
  • Jelly and ice-cream
  • Cake and custard
  • Chocolate mousse
  • Pancakes and strawberries

You may or may not notice that there are only six days in my meal plan, and that’s because we’re out one night.

Vegetarian week

Last time I wrote a meal plan it was for a trial week of vegetarian meals. My husband has decided to become vegetarian and I am trying to find meals we can enjoy together, without taking away the boys’ choices. Overall, the meals went down quite well, though I discovered that Quorn sausages are nobody’s favourite in our house! I found that cooking some of the vegetarian mince for quite a long time rather than the 10 minutes suggested on the packet made it far tastier, and I found myself automatically adding more vegetable and pulses to many meals. The two big surprises though were Quorn chicken nuggets and their Southern Fried Bites. Everyone loved those and we have made a full switch to those over the chicken ones.

  2. I totally get that idea that following something like Slimming World actually ends up becoming more stressful than useful. I’m finding it really hard to stay eating well in this cold weather, I don’t know if that’s a factor for you too.
    Lots of our favourites on here – my kids both love meatballs especially.
